Maybe I'm just old ( ) but I don't really mind the current UI at all. That said I'm not against a refresh, and I would like to turn the menu bar off and so on. Primarily how I use CN is as a tool beside my current working application. As such, screen real estate is a premium, and I would prefer stuff like "Add note" buttons to be small and unobtrusive or the ability to remove/hide them - I only never use keyboard shortcuts for the most part. What has niggled me about a lot of "new" UI designs is they have enormous swathes of flat empty space. It really annoys me. The first thing I do on every Windows installation is shrink the enormous fat task bar and hurl it off onto the secondary monitor out of the way. Similarly with Atom (my text editor) and Vivaldi (my browser) I turn off the status bar, menu bar, and so on.
High DPI screens might also be nice as I am currently trying out my workflow on a Surface Pro device which has a relatively high resolution.
